Potato Spinach Ring (adapted from The Great Green Cookbook)

This recipe is a little time consuming but worth it! Serve with a salad.
Ingredients
4 medium potatoes
2 small yams/sweet potatoes
1 lb spinach
bechamel sauce (see Dips, Spreads & Sauces section)
Instructions
Cook and mash potatoes and yams together. Add butter or milk for a creamy texture. Spoon around the edge of a baking dish, leaving a hole in the center.
Cook spinach for 4 to 5 minutes. Drain thoroughly and chop. Fold into bechamel sauce. Pour into the center of potato ring.
Bake at 375 F for 30 minutes.
