Squash Souffle

Ingredients
1 Sugar Loaf Squash
1 package silken Tofu
½ C packed Brown sugar
½ Tbs Nutmeg
¼ C Pecans or walnuts
¼ C Raisins
¼ C Wheat flour
¼ C Wheat germ
Instructions
Cut and cube squash (remove rind). Steam until tender. Blend squash, tofu, half of brown sugar, nutmeg, and flour in blender until creamy. Pour into a casserole dish. Mix in a bowl, rest of brown sugar, nuts, raisins, and wheat germ and sprinkle on top of mixture. Bake at 350°F for 45-60 minutes. Serves 6.
