Kale and Cabbage Stew

Ingredients

1 Onion, medium size, chopped
1 C Tomatoes, chopped
1/4 C Green peppers, chopped
2 lbs Kale, chopped
1 lbs Cabbage, green, chopped
Hot Red Pepper Sauce (optional)

Instructions

Mix 1-1/2 cups of brown rice and 1/2 cup of wild rice and cook in 4 cups of water. Shred or chop the onions and green pepper. Place in a large wok and add some water. Add hot sauce, if desired, and mix well. Cook until the onions begin to become translucent. When the onions are cooked, chop or shred the kale and cabbage and add to the wok. Add the tomatoes, mix well, and cook until the kale and cabbage are tender, mixing frequently. Serve over a bed of brown rice and enjoy.
