Sweet Potato and Leek Frittata

Ingredients
2 medium sized Sweet potato, peeled and diced (regular potatoes work well too)
1 Leek, washed and sliced
1 clove Garlic
1 Tbs chopped Parsley
3 Eggs
3 Egg whites
½ C Milk (dairy or non)
1/3 C Cheese
Instructions
Sweat leek in a lightly greased lidded pan with the sweet potato and garlic, until the sweet potato is tender. Mix the eggs, egg whites, milk, cheese and parsley together with salt and ground pepper to taste.
Add the cooked sweet potato and leek mixture to the egg mixture, and pour into a lightly greased baking dish or flan dish. Sprinkle top with a little polenta if desired, and bake in a moderate oven for about 35 minutes, or until firm.
