Penne Arrabiata
Recipe for Category Quick Meals for Busy People

This spicy sauce is easy and quick to make - it's my husband's favorite recipe to make (Jennifer Peachey).
Ingredients
1 Tbsp olive oil
4 cloves garlic, finely chopped
½ tsp hot red pepper flakes
½ tsp fresh black pepper
Salt to taste
1 lb penne or other tube pasta
½ cup Parmesan cheese
1/3 cup chopped fresh basil/parsley
5 cups finely chopped, ripe tomatoes (including juice)
Instructions
Heat oil in a large, deep skillet. Add garlic and hot pepper flakes. Cook gently until fragrant, but do not brown. Add tomatoes, pepper and salt and cook for 10-15 minutes or until sauce is medium thick. Add half the basil. Bring large pot of water to a boil. Add pasta and cook until
tender but firm. Drain well and place in a large bowl. Pour sauce over top and sprinkle with remaining basil and heese. Toss well and serve immediately. Serves 6.
