Stuffed Squash Variations

If you find squash bland on its own, consider livening it up with fun fillings! Leftovers of almost anything make great fillings!

Instructions
Option 1: Add fillings; bake 10-15 min longer, until squash is tender and fillings are hot.
Option 2: Bake until soft, scoop out squash and blend with other fillings. Stuff shells, and return to oven until hot.
Filling #1: Chunks of pork (or tofu!), apple, onion, cabbage, ginger, fresh thyme & sage, cayenne, salt. (courtesy of Judie Steeves - Jude's Kitchen section in the Capital News)
Filling #2: Leftover apple-parsnip bake (see right), with a sprinkle of parmesan cheese.
