Mandarin Chicken Roll-Ups

Ingredients
4 boneless, skinless chicken breast
4 10-inch flour tortillas
8 ounces cream cheese
2 mandarin oranges, peeled and sectioned
1 small can pineapple tidbits, drained
2 green onions, chopped
1/2 cup diced pepper
½ cup cashews, chopped
Instructions
Oil a skillet and warm over medium heat. Salt and pepper chicken and cook thoroughly. Remove from skillet. Spread tortillas evenly with cream cheese – this will be the glue to hold it all together. Cut chicken into small pieces and divide between the tortillas, leaving about ˝ inch of tortilla uncovered on one side. Top chicken with mandarin, pineapple, green onions, pepper and cashews. Roll up tightly. Wrap in plastic wrap and refrigerate for 30 minutes before serving.
