Pizza with Kale & Tofu

This is a great way to introduce kale to the skeptical!!
Kale is rich with minerals and vitamins. In this pizza, it is seasoned lightly with lemon and sauteed with tofu, which absorbs its sweet flavour.
Ingredients
1 recipe for pizza dough (for 12-inch crust)
1 bunch kale
1 pkg FIRM tofu
2 Tbsp olive oil
3 garlic cloves, minced
2 Tbsp lemon juice
1 Tbsp tamari
1 medium red onion, sliced thin
2 cups Tomato Sauce
1/2 cup finely grated parmesan
Finely chopped fresh parsley (for garnish)
Instructions
Prepare the pizza dough and let it rise (if making your own dough). Preheat the oven to 500 F. Rinse the kale in a water bath, remove stems, and coarsely chop the leaves. Rinse the tofu and drain in a colander. Cut in half, and then into 1/3 inch strips.
Heat the oil in a large wok or skillet. Add the garlic and cook for a moment over high heat. Before the garlic begins to brown, add the kale. Cook for 5 minutes, stirring frequently. Lower the heat to medium, add the tofu, and continue to cook for 10 to 15 minutes, until the kale is well cooked. Season with lemon juice and tamari.
Roll out the dough and place it in a well-oiled pizza pan. Brush lightly with olive oil and prebake it for 10 min. Remove from the oven and evenly distribute the slices of onion over it. Cover with a layer of tomato sauce, and arrange the kale and tofu. Pour the remaining tomato sauce in a circle. Return to oven and bake another 10 min, until the crust is golden.
Brush crusts with olive oil, top with Parmesan cheese, garnish with parsley, and serve!
