Pico de Gallo Wrap

Wraps are a great way to make meals quick and portable! They're also a great way to entice kids to eat vegetables they might otherwise turn their noses up at!

Ingredients
ΒΌ cup lime juice
1 tsp chili powder
1 garlic clove, crushed
1-2 tsp finely chopped jalapeno pepper
1 tsp sugar
salt & pepper to taste
1/3 cup vegetable oil
1 small celeriac, cut in thin strips
1 cucumber, cut into slices
1 red bell pepper, thinly sliced
3 oranges, seeds removed, sectioned
flour tortillas or pita breads
Instructions
Combine the lime juice, chili powder, jalapeno, garlic, sugar, salt and pepper in a jar with a tight fitting lid. Shake well. Add the oil and shake again. Place celeriac, orange sections, cucumber, and pepper in a bowl. Toss with the dressing. Place a portion of the salad on a wrap and roll, or fill a pita pocket. Serves six.
