Mom's Tofu Balls

Ingredients

Sweet and sour sauce:

1 cup water
1 cup brown sugar
½ cup vinegar
squirt of catsup
tamari to taste
2 tbsp cornstarch

Tofu balls:

1 lb extra firm tofu
½ cup peanut butter
1 small onion, chopped
3 cloves garlic, minced
1 egg
1 tbsp tamari or soy sauce
1 cup bread crumbs, more or less
oregano, dill, basil to taste

Instructions

For the sauce: Combine all ingredients in a pot, bring to a boil, and remove from burner.

For the tofu balls: Sauté onions, garlic, and herbs. Mash together with tofu, bread crumbs (enough to make the balls stick), and tamari. Roll into balls and brown in a frying pan. Lay in a baking dish, pour sauce over balls and bake at 275 for 30 minutes.
