Summer Wraps

Recipe for Category Quick Meals for Busy People

Ingredients

Several lettuce/spinach leaves (washed and dried)
1 stalk of Celery (optional)
½ Cucumer (small) or pickle
¼ C of grated celeriac
1 Carrot (small)
½ Avocado (optional)
2 C of Alfalfa Sprouts (optional)
1-2 Tbs of Mayonnaise or favourite sandwich spread
½ tsp of Mustard or Tamari
Squeeze of fresh Lemon Juice
Sea salt (to taste)
2 Soft tortillas

Instructions

Finely chop the lettuce/spinach, celery, and cucumber and combine with the grated celeriac in a small bowl. Grate the carrot and cube avocado and add to the mixture. Add the sprouts. Mix mayonnaise, mustard or tamari, lemon juice, and sea salt (to taste). Add to vegetable mixture. Wrap and eat.
