Peanut Butter Carrot Roast

Ingredients

3 C Carrots
1 medium Onion, minced
½ C Bread crumbs
2 C Milk or Soy Milk
1 C stewed Tomatoes
1 tsp Sage
2 Tbs Butter, melted, or Olive Oil
1 C Natural Peanut Butter (smooth or crunchy)
2 Eggs, beaten
1 tsp Salt

Instructions

Dice carrots and onion, or put through a food processor. Mix remaining ingredients in given order. Pour into baking pan and bake at 350° for one hour.
