Lisa's Nutty Broccoli Quinoa Salad

Serves 1 nursing mom-on-the-run or 2 not-so-hungry folks!

Ingredients

1 cup cooked Quinoa (or millet)
3/4 cup finely chopped broccoli
1 1/2 Tbsp garlic-chili flax oil
1/2 stalk celery, minced
Squeeze of lemon juice
2 green onions, minced
1 tomato, diced
handful of cilantro, minced
1-2 cups spring mix
1 handful of toasted walnuts

Instructions

Mix together all except the nuts and spring mix. Marinate in fridge for about half an hour if time, or use right away. Make a bed of spring mix, load up the quinoa salad, and then top with walnuts. Yum!
