Curried Parsnips with Yogurt & Chutney

Ingredients
1 bu Parsnips, peeled & chopped
2-3 Tbsp butter or oil
1 onion, thinly sliced
2 pears, cored & thinly sliced
1 tsp good curry powder
¼ cp yogurt
¼ cp chutney
Instructions
Steam parsnips until barely tender (7 min). Melt 2 Tbsp of butter in a medium skillet. Add onion, pears, and curry powder, and cook over medium heat, stirring frequently, for 10 min. Add parsnips, season with salt & pepper, and cook 5 min more, adding 1 Tbsp butter to brown. Remove from heat, and stir in yogurt, your favorite chutney, and cilantro (if available). Serve over sautéed or swiss chard or spinach for a full meal!
