Red Pepper and Tomato Curry

Ingredients
1 ½ Red bell pepper
28oz can of diced Tomatoes (or used fresh)
1 tsp Sunflower oil
1 tsp Cumin seeds
¼ tsp Salt
1 ½ tsp mild Chili powder
¼ tsp Turmeric powder
½ tsp Garam masala
1 tsp Brown sugar
Instructions
Drain tomatoes and place in a bowl. Cut the red pepper into large chunks. Heat the oil in a wide pan and add the cumin seeds. Stir and add the red pepper and sauté for 2-3 minutes. Add the tomatoes and cook, stirring, for 5 minutes, mashing them down as they soften. Add the salt, chili powder, turmeric, garam masala and brown sugar. Stir well, then simmer, covered, for 7 minutes, or until the pepper are cooked to your liking.
