Baked Apples

Wash and core apples, leaving them whole. Combine enough raisins, brown sugar, cinnamon, and grated lemon rind to fill the apples. Place in a pan of shallow water, and bake under the broiler until tender, approx 30 minutes. Remove from the oven and baste with juices from the pan. Serve warm or cooled.
