3 C Apple juice2 C Sugar4 large sprigs of BasilJuice and grated rind of 1 Lemon1 Tbs Cinnamon (to taste)
Combine apple juice, sugar and cinnamon in a sauce pan and heat until sugar has dissolved. Add the basil and cover. Let steep for 30 minutes. Strain out the basil and add the lemon juice and rind to the liquid. Chill thoroughly. Prepare in an ice cream maker according to manufacturers instructions or pour in a shallow dish and place in freezer, stirring every 30 minutes, until it is frozen. (makes 4-6 servings).
