2 ½ C raspberries, divided2/3 C Ricotta cheese (part-skim)1/3 C Orange juice1 tsp vanilla1 tsp grated orange zest
Reserve 2 Tbs of raspberries for garnish. Process the raspberries in a food processor for 1 minute. Add ricotta cheese, orange juice, and vanilla. Continue processing, scraping sides often, until everything is well blended. Add orange zest and continue processing until it is the consistency of frozen yogurt. Serve immediately. Makes 6 servings.
