Makes 6 servings; recipe can be halved.
12 Plums, pitted and halved1 C White Sugar1/2 C Water2 Tbs Tapioca1/2 tsp Ground Cinnamon
2 1/4 C All-purpose Flour3 Tbs White Sugar2/3 C Milk3 Tbs Butter, melted
Preheat oven to 350°F. In a 2 quart baking dish, stir together plums, 1 C of sugar, water, tapioca, and cinnamon. Bake in oven for 25 minutes. Increase oven to 450°F. In a medium bowl, mix flour, 3 Tbs sugar, milk and butter to form a shortcake dough. Drop dough by spoonfuls onto baked plum mixture. Bake for 10 minutes, until golden brown.
