3 Eggs, beaten¾ C Unsweetened applesauce¾ C Milk + 1 Tbs Vinegar (replaces buttermilk)½ tsp Stevia powder2 tsp Vanilla extract2 tsp ground Cinnamon2 tsp Baking soda2 C Spelt flour (whole wheat, soy, or oat flour can also be used) ½ tsp Salt1 can 8oz. crushed pineapple, undrained2 C grated Carrots
In a mixing bowl, combine eggs, applesauce, milk and vinegar mixture, stevia and vanilla. Mix well. Combine flour, cinnamon, baking soda, and salt, and stir into egg mixture. Stir in pineapple and carrots. Pour into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 350ºF for 30 minutes (check using the tooth pick method). Remove to wire rack to cool.
