1 Pie crust of your choice2 C firm, tart Apples, peeled, cored, and sliced1/3 C Raisins (optional)4 large Eggs3/4 C Maple syrup or honey1 C plain lowfat or nonfat Yogurt1 tsp pure Vanilla extract1/2 tsp Cinnamon1/4 tsp Salt
Preheat oven to 375°F. Spread apples and raisins evenly in unbaked pie shell. In a blender, combine the eggs, maple syrup or honey, yogurt, vanilla extract, cinnamon, and salt, and blend until creamy. Pour this custard over the apples and bake for about 1 hour, or until set. Allow to cool before serving.
