Scrambled Tofu

Ingredients
pinch turmeric
2 tsp tamari
1-2 tsp canola oil
1 minced onion
2 stalks of finely-chopped celery
1 lb extra firm tofu
Instructions
Saute the turmeric and tamari in the canola oil for 1 minute. Add the onion and celery, and saute for 3-5 minutes. Crumble the tofu and add to the vegetables. Cook, covered, for 10-15 minutes, stirring occasionally.
