Tofu and Kale Quiche
Recipe for Category Breakfasts Anytime

Ingredients
1/2 tsp Canola oil
1/2 C Green onions, chopped
8 oz firm Tofu, crumbled
8 oz soft Tofu, crumbled
1 C Kale, finely chopped
1 C grated Soy cheese
1/2 C Red bell peppers, chopped
1/2 tsp Salt
1/2 tsp Turmeric
9-inch prepared pie shell
Instructions
Preheat oven to 350° F. Heat the oil in a small skillet. Add green onions and sauté for 3 minutes. Add remaining ingredients except the pie shell and sauté until cheese begins to soften and kale wilts slightly, about 4 minutes. Transfer the mixture to the pie shell and bake for 40 minutes. Remove from oven and let sit for 10 minutes before serving. Makes four servings.
