Summer Squash Pancakes

Ingredients
1 C Summer Squash, grated
1/2 tsp Salt, dash of Pepper
1 Tbs chopped fresh Parsley
1 medium clove Garlic, minced
3/4 C grated Parmesan Cheese
1 large Egg
1 C Flour mixed with 1 tsp Baking Powder and 2 tsp Oil (or use bisquit or pancake mix)
Milk
Instructions
Combine all the ingredients in a mixing bowl. Add enough milk to make a pancake-like batter. Drop by spoonfuls onto a hot oiled griddle or skillet. Turn over when bottom is golden and cook until browned on both sides.
