Okanagan Coronation Grape Baked Pancake

Ingredients
1 1/2 C Coronation grapes
1/4 C organic sugar
2 Tbsp butter
1/2 C organic flour
1/2 tsp sea salt
12 C organic milk
2 organic eggs
a dusting of icing sugar
Instructions
Preheat oven to 425 degrees F. Butter a 9-inch casserole dish.
Saute butter, grapes, and sugar in a frying pan over medium heat until sugar dissolves. Remove from heat and place in buttered casserole dish.
In a bowl, add flour, salt, milk, and eggs, and mix until combined, and pour over grapes. Bake for 20 minutes until pancake is puffy and golden brown.
Cut into wedges and serve immediately with a dusting of icing sugar.
Serves 2-4 people.
