Chunky Rhubarb Applesauce

Ingredients

2 Apples (unpeeled), chopped

1 C Rhubarb, chopped frozen or fresh Rhubarb

½ C frozen or fresh Strawberries

¼ C granulated Sugar

2 tsp grated Orange rind

1/3 C Orange juice

Instructions

In saucepan over medium heat, combine apples and 1 tablespoon water; cook, stirring occasionally, for 5 minutes. Stir in rhubarb, strawberries, sugar, and orange rind and juice; bring to boil. Reduce heat and simmer, stirring often, for 10 minutes or until fruit is softened. Serve warm or cool. Makes 2 1/2 cups.
