Bulgur Stuffing

*for a 6-10lb turkey

Ingredients

2 tsp olive oil
4 onions
2 cloves garlic, chopped
4 stalks celery, chopped
½ cup dried apricots (optional)
4 tbsp raisins
2 tbsp pine nuts, toasted
2 cups bulgur
4 cups chicken stock
½ cup chopped fresh parsley
salt and pepper to taste

Instructions

Heat oil in a large sauce pan. Add onions and garlic and cook gently for five minutes. Add celery, apricots, raisins and pine nuts. Cook for one minute. Add bulgur, stock, salt and pepper and bring to a boil. Reduce heat, cover and cook gently for 10 minutes, until liquid is absorbed. Add parsley. Cool. Stuff and dress turkey, cook immediately.
