Carrot Ring
Recipe for Category Special Holiday Recipes

If you're starting to think abut Christmas meals and entertaining, you might like to try this easy, but fancy, way to serve peas and carrots.
Ingredients
2 lbs carrots, roughly chopped
1 good pinch of nutmeg
1/4 cup chopped parsley
2 Tbsp melted butter or olive oil
3 eggs, beaten
1 tsp chopped fresh thyme
3 Tbsp snipped chives or finely chopped shallots
Cooked green peas and mint sprigs to serve
Instructions
Cook carrots. Drain and puree in a blender or mash until smooth. Mix in remaining ingredients (except peas and mint).
Spoon into a well-greased 8-inch ring tin, and bake at 180 C for 35 minutes (or until firm to the touch). Run a knife around the edges of the ring to loosen and carefully invert onto a serving plate.
Fill the center of the ring with buttered green peas and garnish with sprigs of mint or thyme. May be covered with foil and kept warm at 300 F.
