Kiwi Cake:
1 ½ C Flour (whole wheat works well)1 Tbs Baking powder½ tsp Salt ¾ C Sugar 1 Egg or egg substitute, beaten½ C Butter (melted) or oil110 ml Milk or Soy Milk1 Tbs Grated lemon rind1 ½ C Kiwis, peeled and chopped (approximately 4 kiwis)¼ C Walnuts, chopped
Honey Icing:
½ C Sugar¼ C Honeypinch of Salt½ C Marshmallows (diced)1/8 C Water1 Egg white or substitute, stiffly beaten
Preheat oven to 400° F. Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened. Fold in the lemon rind, kiwis, and nuts. Pour into a cake pan (8”x 8”) and bake for approximately 30 minutes.
Combine sugar, honey, water, and salt. Gently boil until sugar dissolves. Add marshmallows. Pour slowly, beating constantly, onto egg white. Beat until thick and creamy.
Spread the icing over the top and sides of the cake. On the top of the cake arrange sliced strawberries into the shape of a Maple Leaf (this may take a bit of practice, but it is well worth the effort – a true crowd pleaser!)
