Almond Apple Stuffing

Ingredients
2 C chopped Apples
1 ½ C sliced Almonds
¾ C chopped Onions
¾ C chopped Celery
4 Tbs Olive Oil (extra virgin)
1 tsp Cinnamon
½ tsp Vegetable or Poultry seasoning (stuffing seasonings such as sage, thyme, and rosemary work best)
¼ tsp Salt
6 C Whole Wheat bread, cubed
1 C Raisins
1 Egg, lightly beaten
½ C to ¾ C Apple cider or juice
Instructions
Sauté apples, almonds, onion and celery in oil for 5 minutes, stirring. Remove from heat. Stir in seasonings. Toss together with bread cubes and raisins and add the apple mixture. Stir egg in ½ C of apple cider; toss into bread mixture. Add more cider if moister stuffing is desired. Place in a casserole dish and bake for 30-45 minutes at 375°F (with casserole lid on). This recipe can be halved, but still use 1 egg. Makes 10 cups.
