Rutabagas are the underdogs in the vegetable world. Never celebrated, never appreciated, seldom ever selected. But the lonesome rutabaga has so much to offer. They are fat free, cholesterol free, very low sodium, a source of folacin and fiber, and an excellent source of vitamin C.
Not only do rutabagas offer nutritional value, but they are also easy to use and delicious. Try grating a raw rutabaga and apple into your salad or use julienned sticks for a veggie tray. Dice or grate into soups, casseroles, or stews. For a creamy dish, steam and mash your rutabaga (combined with potatoes if you want) and add cream and sea salt, or olive oil, sea salt, and nutmeg, or a dash of maple syrup or apple juice.
