Garlic Roasted Sunchokes

A simple way to enjoy sunchokes.
Ingredients
1 lb Sunchokes
3 cloves Garlic, smashed
1/2 tsp coarse Salt
3 Tbs Olive oil
2 tsp Thyme (dried)
Instructions
Preheat your oven to 375°F. Scrub your sunchokes until they look clean, then peel them with a small knife or vegetable peeler as best you can. Place the sunchokes into an oven-safe casserole dish. Cover with the remaining ingredients and give everything a quick stir to make sure the sunchokes are coated. Bake for about 30 minutes, stirring occasionally (time will depend on the size of your sunchokes). They should be fork-tender (like a potato) when they’re ready. Mash them up a bit with a fork or potato masher and serve. Serves 4 – 6.
